December 16th marked the start of Las Posadas, a 9-day Mexican Christmas tradition that lasted until Christmas Eve. Despite its unique cultural and biblical origin, this holiday, to me, means a time to celebrate family and friends, love and joy, and peace and harmony. No celebration is complete without delicious food. As a busy mom, I always prefer recipes that are simple and flexible. Today I'd like to share with you our family's favorite Easy Burrito Plate featuring HERDEZ Salsa Casera, HERDEZ's most popluar salsa made with tomatoes, Serrano peppers, onions, cilantro and salt.
Ingredients:
1 lb lettuce and red cabbage mix
1/4 cup freshly squeezed lime juice
1/4 cup olive oil
1/3 teaspoon salt
1 cup HERDEZ Salsa Casera
1/2 cup sour cream
1/2 cup shredded cheese
2 cups Mexican rice
1 ripe avocado, pitted and thinly sliced (optional)
1 lb grilled shrimp (optional)
2-8 flour tortillas (optional)

Directions:
1. Mix lettuce, red cabbage, lime juice, olive oil, and salt in a salad bowl, and transfer the mixture to center of plate;
2. Place HERDEZ Salsa Casera, sour cream and Mexican rice on the sides, and sprinkle shredded cheese on top;
3. (Optional) Top the lettuce mix with grilled shrimp and sliced avocado for added flavors;
4. Wrap everything inside the tortillas to make your own burrito (Optional) or mix everything together and eat straight from the plate.
